These beautiful Carabineros are the king of all prawns and named after the Spanish Border Guards, who's uniform once featured the distinctive deep red colour. Also known as Scarlet Shrimp or Cardinal Prawns. We source our Carabineros from the Fernandez Montoya brothers of Hispamare in Spain. These prawns are caught by small family-owned boats in deep Mediterranean waters off the coasts of southern Spain and Morocco. They are carefully packed by hand and IQF-frozen on board immediately to lock in freshness and flavour.

More comparable to little lobsters than to prawns, Carabineros are best eaten simply grilled, barbecued or pan-fried, with the head of the prawn absolutely packed full of intense flavour like no other shellfish. In Spain they are often eaten raw - with a little lemon, a few drops of olive oil and sea salt. It is a seafood indulgence for sure, but you will not be disappointed!
